Herle's a super simple crock pot recipe for low carb chicken chili. If you opt to add beans, white pinto are the perfect addition.

1 cup sour cream 2 cups heavy cream 1 cup ranch dressing 3 cups chicken broth 4 oz softened cream cheese Meat from 8 chicken thighs (I preboiled and shredded these but you could just put in raw, and extend cooking time) 2 tablespoons cumin 2 tablespoons garlic powder 1 tablespoon pink Himalayan salt 2 tablespoon cajun seasoning 2 diced poblano peppers 1 diced bell pepper 1 diced yellow onion
Mix all ingredients in crock pot and cook on high for 6 hours (or 8 if using raw chicken) Top as desired, cilantro, cheese, and jalapenos are some of our favorite toppings!
