Springtime Salmon Salad with Homemade Dill Vinaigrette

Ingredients:
4 cups spring mix (or baby lettuce) washed and patted dry
3 red radishes, peeled and sliced thin
3 asparagus, ends sliced off and sliced evenly down the middle
1/2 medium cucumber, washed and rinsed
1/4 red onion, peeled
1 medium campari tomato
1/4 pound smoked sliced salmon
Cilantro for garnish
Dressing:
2 tablespoons fresh chopped dill
1 teaspoon granulated sugar substiute of your choice
1/4 cup lemon juice
1/4 teaspoon salt
1/4 teaspoon cracked black pepper
2 tablespoons olive oil
Directions:
Whisk dill and lemon juice together. Add in the dill, salt, and pepper. Whisk together.
Pour into a glass jar with a lid, add in olive oil. Seal jar and shake very well. Shake evenly before pouring over salad.
To assemble salad,
Arrange the spring mix on the plate, top with assorted vegetables. If you like, you can roll the smoked salmon into "roses" for an added touch. Cucumbers can be served diced, or in ribbons. We opted to do both!
Top with the dill dressing and enjoy!
