Shrimp Ceviche

Shrimp Ceviche
Ingredients:
1 pound boiled shrimp, diced
1/2 cup red onion finely diced
1 jalapeno (leave seeds if you like spicy, omit otherwise)
1/2 cup finely diced cucumber
1/4 cup diced cherry tomatoes
1/4 cup finely diced cilantro
1/2 cup lime juice
1/4 cup lemon juice
Salt and pepper to taste
Directions:
Combine all ingredients and refrigerate for 4 hours or overnight.
Serve as is or with endive to make serving boats
