Red Pepper Cauliflower Mash

Ingredients:
1 medium cauliflower – cut into 4
1/2 roasted red peppers
1/2 cup sour cream
2 tbsp butter
1/2 cup almond milk
2 tsp minces fresh garlic
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/2 tsp pepper
1 tsp olive oil
Directions:
Bring 6 cups of salted water to a boil. Add your cauliflower. Boil for approximately mins or until tender. Drain and set aside.
Using a blender or an immersion hand blender, combine all of your ingredients and blend until you have a smooth consistency.
If the consistency is thick add a touch more almond milk and blend until smooth for about 3/5 mins. Taste test, add additional salt if desired.
Serve warm
