Pork Rind Crusted Cheese Sticks

12 mozzarella cheese sticks

2 cups finely ground pork rinds (use a food processor to achieve)

2 tablespoons Italian herb seasoning

2 eggs whisked


Mix Italian herb seasoning in to pork rinds and set aside. Slice mozzarella cheese sticks in half. Dip cheese sticks in pork rind herb mixture. Place them on a plate and freeze for 30 minutes.

On your stovetop, place a medium sized pot on high heat and add 2 cups coconut oil. Fry the cheese sticks for approximately 1-2 minutes, turning in the oil. Place on a plate lined with a paper towel to absorb excess oil. 

Serve with your favorite low carb tomato sauce or enjoy as is!
