1/2 pork belly cut into 1-1/2″ cube sizes (most butchers will cut for you)
Pink Himalayan salt (liberal use)
Cajun seasoning (or just salt)
In a large skillet over low heat, render the cubes for about an hour and a half. Drain off the fat as needed, and stir occasionally to avoid sticking.
Preheat oven to 375 degrees.
Place cubes on a greased wire rack and baking sheet and salt liberally. (For easy clean up line baking sheet with foil) Make sure the pieces are not sticking. Bake for 35 minutes, then flip. Season with additional salt. Bake for another 35 minutes. They should be a golden brown and crisp to the touch.
While they are still hot toss them in a stainless steel bowl and coat with Cajun seasoning. Enjoy while hot!
