Peanut Butter Chocolatey Cookies
2 Peanut Butter Chocolatey Love Good Fats Bars
1 cup almond flour
1 egg, whisked
1 teaspoon vanilla extract
1 tablespoon unsweetened cocoa powder
2 tablespoons granulated monkfruit
1/4 cup unsweetened peanut butter
Preheat oven to 350 degrees Fahrenheit
Slice bars horizontally, and cube into bite size pieces. In a medium size mixing bowl add in almond flour, cocoa powder, and monkfruit. Mix well. Add in the egg, vanilla, and peanut butter. Mix well. Lightly fold in the cubed Peanut Butter Chocolatey bar pieces.
Roll into 8 evenly sized balls and lay 2″ apart on a silicone baking sheet.
Using a fork, flatten the cookies making the traditional “criss cross” pattern.
Bake for 8 minutes.
Remove from oven and allow to cool completely.
Store up to one week in the refrigerator.
