One Pan Taco Skillet

2 pounds ground beef

1 diced red bell pepper

1 medium zucchini, grated or finely diced

1 medium yellow onion diced

1 egg, whisked

4 tablespoons taco seasoning

1 teaspoon salt

1 teaspoon red pepper flakes


Brown ground beef in a cast iron skillet. Add in bell pepper and onion. Cook for 4 minutes on medium heat. Remove from heat and allow to cool. In a large bowl add skillet contents, shredded zucchini, all seasonings, and the egg. Mix evenly.

Put all ingredients back into cast iron skillet and bake for 30 minutes at 350 degrees Fahrenheit. Remove skillet and top with spring mix, avocado, red cubanelle peppers, sliced radishes and limes!
