No Bake Macadamia & Coconut Berry Dessert Bar
2 Coconut Macadamia Love Good Fats Bars
1 cup heavy whipping cream
2 tablespoons powdered monkfruit
1/2 teaspoon lemon extract
8 fresh raspberries
12 fresh blueberries
Grease a 5-3/4″x 3″ mini loaf pan with cooking spray.
Using your hands, break up the two Coconut Macadamia bars and press them into the bottom of the pan. Top with the berries and place in the refrigerator to firm up.
In the meantime, whip the heavy whipping cream until stiff peaks form. Mix in the powdered monkfruit and lemon extract.
Spread on top of the berries in the loaf pan.
Freeze for 2 hours, or refrigerate covered overnight.
Slice and enjoy!
Serves 4 guests.
