Mexican Hot Chocolate Pork Chops

4- 1″ thick boneless pork chops

3 tablespoons olive oil, separated

1/2 tablespoon unsweetened cocoa powder

1 teaspoon cinnamon

2 teaspoons Mexican Hot chili powder

1/4 teaspoon pink Himalayan salt

1/2 teaspoon black pepper

1 tablespoon lime juice


Place pork chops in a glass or stainless steel bowl. Add in 1 tablespoon of the olive oil and all dry seasonings, toss to evenly coat. Grease a cast iron skillet with the remaining two tablespoons of olive oil and place on high heat. Cook chops 4 minutes covered on each side.

Cover with a lid, and add 1 tablespoon of lime juice and remove from heat.

Let chops rest 10 minutes before serving.
