Mediterranean Salmon Power Bowl & Cilantro Lime Dressing

Serves 4
Ingredients:
1 pound salmon- split into 4 serving sizes
4 tablespoons lemon and pepper seasoning
1 medium cucumber, sliced
1 cup pickled cauliflower
1/2 cup kalamata olives
4 wedges brie cheees
1 cup oyster mushrooms- sauteed in olive oil until brown
1/2 cup sliced almonds
4 cups spring mix
Directions:
Coat salmon in the lemon pepper seasoning. Bake in your airfryer for 12 minutes at 400 degrees.
Evenly distribute spring mix among 4 salad bowls and top with salmon. Arrange cucumbers, olives, mushrooms, cauliflower, brie cheese, and almonds around plate.
Drizzle salmon with creamy cilantro lime dressing and enjoy.
Cilantro Lime Dressing
Ingredients:
1 cup diced cilantro
1/2 cup sour cream
1/2 cup Greek yogurt
1/4 cup lime juice
2 tablespoons apple cider vinegar
1 jalapeno, seeded and deveined
2 teaspoons pink Himalayan salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1/2 teaspoon dried basil
2 tablespoons unsweetened plain almond milk
Directions:
Combine all ingredients in food processor and combine. Store in a glass jar covered up to 5 days.
