Low Carb Zucchini Chocolate Chip Bread




Ingredients:

1 medium zucchini

1 cup almond flour

1/2 cup coconut flour

3/4 cup granulated brown sugar substitute, such as lakanto golden

1 tablespoon baking powder

1 medium egg

1/2 cup sugar free chocolate chips

1/4 cup melted coconut oil

2 teaspoon vanilla extract






Directions:

Preheat oven to 350 degrees Farenheit. Grease a loaf pan very well and line with parchment paper.

Using a cheese grater, shred the zucchini. Roll it up in a clean hand towel and express the water.

In a bowl, combine the almond flour, coconut flour, sweetener, and baking powder. Mix in the wet ingredients slowly, then fold in the chocolate chips.

Spoon all into the loaf pan evenly and bake for 30-35 minutes, or until toothpick inserted comes out clean.
