Lemon Garlic Cauliflower Mash

Ingredients:
1 cauliflower head (cut into 4)
7 cloves garlic
3 tablespoons sour cream
3 tablespoons of mayo
5 tablespoons grass fed butter (softened)
4 to 5 lemon slices, cut about 1/2" thick
1 teaspoon crushed black pepper
Salt to taste
Fresh thyme (for garnish only)
Directions: In a medium pot bring salted water to a boil then add the cauliflower and 4 garlic cloves. Cook for 8 to 10 minutes or until tender. Remove the cauliflower & garlic cloves, drain and set aside. In a small pan, add 1 tablespoon of grass fed butter when bubbly add the lemon slices and 3 whole garlic cloves. Keep stirring until they have browned slightly. Turn off heat and set aside. Add all the ingredients (except for the roasted lemon slices and garlic) to a blender or food processor and blend until smooth. Plate and garnish with the lemon slices & garlic and thyme sprig if desired
