Lemon Energy Balls
2 Lemon Mousse Love Good Fats Bars
1/4 cup golden flaxseed
1/4 cup chia seeds
1 scoop unflavored collagen powder
1 tablespoon poppy seeds
1/4 cup unsweetened almond butter
1/4 cup unsweetened coconut
In a food processor, pulse the 2 lemon mousse Love Good Fats bars until they are completely crumbled and resemble sand.
In a medium size bowl, add in the pulsed lemon bars, flaxseed, chia seeds, collagen powder and poppy seeds. Mix very well.
Add in the almond butter and mix again. Roll into individual size 1-1/2″ balls and roll in the unsweetened coconut.
Allow to set in the fridge for 45 minutes.
Store refrigerated up to 5 days.
Makes 8 individual energy balls
