Keto Savory Nush Cakes Crispy Fried Chicken

4 Carrot Spice Nush Food cakes

1 teaspoon onion powder

1/4 teaspoon Himalayan pink Salt

2 teaspoons cumin

4 boneless, skinless chicken thighs

2 eggs

3 tablespoons water

1 tablespoon coconut or avocado oil

Preheat oven to 375 degrees Farenheit. 

On an ungreased sheet pan, finely crumble the 4 Carrot Spice Nush Food cakes with your hands. Top with onion powder, salt, and cumin. Mix thoroughly,  then spread the cake crumbs out evenly. Bake the cake crumbs for 20 minutes. Remove from oven, and let cool. Keep oven on.

Combine the two eggs with water in a bowl, whisk evenly.

While cake crumbs are cooling, dip each chicken thigh in the egg wash, then coat each side of the chicken thighs in the cake crumbs.

In a sautee pan, over medium heat, add the coconut or avocado oil. Cook the chicken thighs 3 minutes on each side. Remove and place on a greased sheet pan, place in the oven and bake at 375 degrees Fahrenheit for 30 minutes, or until a meat thermometer inserted reads 165 degrees Fahrenheit.

Serve with your favorite ranch for a great dipping sauce!
