Deconstructed Pork Carnita Bowl


2 - 12 oz cans pulled pork in water (or any canned meat, such as chicken will do)

1 tablespoon olive oil or butter

1 medium yellow onion, diced

1 bag (4 cups) frozen cauliflower rice

1 cup mayonnaise

2 canned chipotle peppers in adobo sauce

2 teaspoons pink Himalayan salt

2 teaspoons smoked paprika


Microwave the frozen cauliflower rice as instructed on the bag.

In the meantime, heat a medium pan over high heat, add in the olive oil and onions. Cook down for 1 minute. Drain the pork from the cans and add to the pan and 1 teaspoon of the pink salt. Continue cooking on high heat, you want the meat to "crisp" up.

In the meantime, combine the mayo and chipotle peppers in a blender with 1 teaspoon of salt.

Blend for 30 seconds
