Charred Red Cabbage

Ingredients:
1 medium size head of red cabbage, julienned
1 stalk bok choy, diced
4 tablespoons bacon fat
2 bunches of green onions, diced
5 tablespoons of cooked bacon, diced
4 tablespoons pepitas
1/2 bell pepper, julienned
Dressing:
1/4 cup apple cider vinegar
3 tablespoons granulated sugar substitute (we used Pyure)
3 tablespoons dijon mustard
3 tablespoons olive oil
1 tablespoon garlic powder
1 teaspoon lime juice
Salt and pepper to taste
(Blend all ingredients in blender and set aside)
Directions:
Heat bacon fat in a large sautee pan over medium heat. Add in cabbage and bok choy. Cook for approximately 25 minutes until red cabbage starts to wilt. Remove from heat, put in a glass bowl.
Add in green onions, crumbled bacon, and dressing mixture. Toss with tongs. Serve hot or refrigerate for a great cold option as well!
