Blackened Salmon & Citrus Salad

Ingredients:
4 salon fillets (3 ounces ea)
2 tablespoon olive oil
1 tablespoon soy sauce
pepper
3 ounces mixed greens (per plate) which equals 3 cups
Citrus Salsa:
1/2 orange – you can always leave this out
1 lime
2 tomatoes, peeled and diced
2 tablespoons extra virgin olive oil
2 tablespoons chopped fresh cilantro
1/4 teaspoon swerve
salt & pepper (optional)
Directions:
To make the salsa, cut all the peeled and white pith from the orange and lime and remove the sections, discarding the membranes and reserving the juices.
Chop the orange sections and mix with the reserved juice, the tomatoes, oil, and cilantro. Add the sugar and season with salt and pepper, if using. Refrigerate.
Preheat Pan with 1 tablespoon olive oil
Mix the rest of the olive oil and soy sauce together, brush over the Salmon, and season with pepper, if using. Place the salmon fillets in the preheated pan, turning once, for 8/10 minutes, until the salmon is firm and flakes easily.
Serve the salmon fillet on a plate of mixed greens with a spoonful of the citrus salsa throughout
